Key Lime Pie

Directions:

  1. Preheat your oven to 350 degrees. Combine the graham cracker crumbs, sugar, and melted butter. Press this mixture into a sprayed pie dish. Any vegetable spray will work, but I do prefer a glass pie dish. Bake this for about 8-9 minutes, and let it cool while you make the filling.
  2. Combine the yolks, condensed milk, lime juice, and zest. The mixture will begin to thicken on its own as you stir it. Pour this on top of your graham cracker crust and give it a little shake so that it settles evenly.
  3. Bake the pie in the same 350 degree oven for about 15 minutes. You should see that the egg is cooked and it will only have a little jiggle if you shake the pie dish. 🙂
  4. Let it come to room temperature and then refrigerate it for few hours. I topped mine with whipped cream and sliced limes- but it is really anything goes! Some even like it with meringue! I just like mine nice and cold with memories of my 20s in the Florida sunshine. XOXO, K
